Freezing fresh fish is out of the question for the top culinary world in the Netherlands and far beyond. Fresh ingredients are the magic word for a delicious taste and structure. In collaboration with the University of Wageningen, tests have done on nitrogen freezing in a very short time to - / - 60 degrees. This way you can simply transport and store the product at - / - 18 degrees. Technically, something special happens: the protein cells in the fish meat do not get the time to freeze and the product remains completely in its fresh structure. The method of defrosting is taken out of the freezer 24 hours prior to use in the refrigerator, approximately 2-5 degrees and removed from the packaging before use.
