The Carstens concept is created by renound chef Maik Kuipers, formerly known as Head Chef at De Librije ***. Maik has created a concept that hones in on Dutch seasonal produce, working with the freshest ingredients when they are at their best.
This brasserie in the heart of Amsterdam creates a connection between the farm and the city in a relaxed and approachable environment.
Maik has worked at De Librije*** for 14 years, starting when he was 19 years old. In 2009 he became the youngest head chef to cook at this level in the Netherlands.
De Librije is a restaurant in Zwolle, The Netherlands. It is located in the former library, hence the name "De Librije", of a 15th century Dominican abbey. In 1992 the restaurant received its first Michelin star. The second star followed in 1999, and the restaurant has three stars since 2004. It is currently one of two restaurants in the Netherlands with three Michelin stars. In 2007 and again in 2008, the restaurant received a score of 19.5 and became Restaurant of the Year in the Dutch edition of Gault Millau.
